The People Behind OnlyPans' Taqueria
Audrey Cruz
She is the visionary behind OnlyPans’ Taqueria, taking a leap of faith from corporate work to build a space to celebrate food and inclusivity. Alongside her mother and brother, they built and launched the brand in their humble kitchen, later on pivoting to a late-night staple in Poblacion.
Audrey emphasizes inclusivity and aims to build community through her brand. Her leadership is rooted in resilience, empathy, and a clear idea that success is about lifting others and staying grounded in personal values.
Mate Cruz
Mate, Audrey’s mother, stands as a vital part of the foundational team behind the brand. She has been there from the start to establish operations and culture. She brings influence to the business’s values; community and family oriented, deeply invested in the team’s livelihoods.
Andrus Cruz
Andrus completes the trio behind OnlyPans, helping bring their concept to life. As a family unit, he adds to the operational backbone, maintaining consistent quality and values that have pushed the brand to become a notable part of the Makati dining scene.
Chef Carlos
The head chef leads the kitchen with precision and creativity, crafting the brand’s signature flavors. He combines traditional Mexican techniques with local Filipino influences to build community through food.
